Lois Kazakoff's Holiday Fruit Bread
Yield five mini loaves
1 1/2 c. sugar
2 t. baking powder
3/4 t. table salt
2 c. flour
1/2 c. orange juice
5 lightly beaten eggs
1 t. vanilla
4 c. dried fruit (may include whole dates or whole prunes)
3 c. whole nuts
Preheat oven to 325F. Grease and flour five mini loaf pans.
Stir together dry ingredients. Mix fruit and nuts and stir in to separate the sticky fruit. Mix juice, eggs and vanilla, then combine all to form batter. Divide batter more or less equally into the five pans. Bake for about 50 minutes or till golden and firm. Let cool 10 minutes before turning out to cool thoroughly. I wrap in plastic and foil to mail. Keeps well and freezes well.
